This is a unique opportunity to work alongside the renowned Roy Brett and his acclaimed Edinburgh seafood restaurant, Ondine. As Executive Chef, you will have the unparalleled opportunity to shape the culinary direction of Seaton House. You will work in collaboration with Roy Brett, celebrated for his mastery of seafood at Ondine in Edinburgh, to deliver an exceptional dining experiences at Ondine and our other culinary experiences including the Board Room, Old Toms and in room dining. Your innovative dishes will highlight the freshest locally sourced ingredients and expertly selected wines and whiskeys. The restaurant offers a culinary experience like no other, and you and the team will ensure our guests enjoy the very best of Scottish cuisine. What You'll Do: Develop and design menus Lead, train, and inspire a dedicated kitchen team. Maintain the highest standards of food quality and presentation. Ensure compliance with health and safety regulations. Source and select premium, sustainable ingredients. What We're Looking For: Proven experience as a Head Chef in a high-end restaurant or hotel. Passion for seafood and knowledge of sustainable sourcing. Strong leadership skills and the ability to manage a dynamic team. Creativity and a keen eye for detail.
