As a Head Pastry Chef at Nobu Hotel London Portman Square, youll lead our pastry kitchen with artistry, innovation and genuine passion. You will Lead, inspire and develop the pastry team, fostering a collaborative and supportive kitchen environment Create innovative pastry concepts, menus and seasonal offerings that reflect Nobus style and standards Develop and implement a standout Afternoon Tea experience for the hotel Ensure every dish is crafted with exceptional quality, precision and presentation Manage budgets, food costs, labour planning and overall pastry profitability Maintain all food safety, hygiene and health & safety requirements across the pastry section Oversee stock control, ordering and supplier relationships, ensuring consistency and quality Train and mentor chefs at all levels, encouraging growth and advancement Collaborate with the Executive Chef on new ideas, tastings and creative development Support marketing and Food & Drink initiatives with imaginative pastry activations Communicate effectively with colleagues across all departments to ensure seamless service Respond to internal and external audits and follow through on action plans Ensure kitchens and workspaces remain clean, organised and operational at all times Attend meetings, share insights, and contribute to the wider kitchen strategy Uphold and embody Nobu values of Family, Crafted, Smile and Kokoro Demonstrate a proactive, positive and hands-on approach, especially under pressure Assist the wider kitchen team and support guest needs as required What Were Looking For You are a skilled pastry professional with experience in a senior kitchen role, ideally within luxury hotels or high-end restaurants.
