About the role:
We are recruiting for an exclusive restaurant opening, with a fine dining concept in Dubai, inspired by the precision and artistry of traditional Japanese cuisine, fused with modern techniques. This elegant restaurant will showcase omakase-style tasting menus, seasonal premium ingredients, and contemporary Japanese aesthetics. Therefore, the ideal candidate must be highly experienced and skilled Head Sushi Chef with an area of expertise in omakase style tasting menu.
Responsibilities:
Lead and oversee the Sushi Team, ensuring the highest standards of preparation and presentation with a focus in the area of omakase inspired tasting menus
Develop and innovate new sushi creations while maintaining traditional techniques and flavours
Manage live sushi and robata counters, engaging with guests to enhance their dining experience
Oversee inventory, ordering, and quality control to maintain consistency and freshness
Train, mentor, and inspire junior chefs, fostering a culture of excellence
Uphold food hygiene and safety standards at all times.
Qualifications:
Formal training in Japanese cuisine
Mastery of traditional sushi preparation, knife skills, and presentation
Proven experience as a Head Sushi Chef in high-end or Michelin-starred establishments
Strong knowledge of Japanese ingredients and culinary techniques
Ability to work in a fast-paced, high-pressure environment
Excellent leadership and communication skills
Fluency in English; knowledge of Japanese is an advantage
Passionate about Japanese culinary arts and delivering exceptional guest experiences
Open to preparing Halal cuisine
Willing and be able to relocate to Dubai.
