We are now looking for a Pastry Sous Chef to join Gaias back-of-house team and support the delivery of an outstanding pastry programme.
The Role: Pastry Sous Chef
As Pastry Sous Chef, you will work closely with the Head Chef to oversee daily pastry operations, maintain high production standards, and support the training and development of the pastry team. This is a hands-on role suited to a Pastry Sous Chef who thrives in a high-volume, quality-driven environment.
Key Responsibilities
Support the Head Chef in managing the pastry section on a day-to-day basis
Assist with menu development, recipe consistency, and cost control
Supervise, train, and motivate pastry chefs to ensure high performance and development
Ensure all desserts meet Gaias standards for quality, presentation, portioning, and temperature
Assist with ordering, stock control, inventory, and production planning
Maintain strict food safety, hygiene, and grooming standards at all times
Ensure smooth service during busy periods through strong organisation and leadership
Foster a positive, professional, and collaborative kitchen environment
About You
Proven experience as a Pastry Sous Chef or strong Pastry Chef de Partie ready to step up
Background in high-end, quality-led restaurants or hotels
Strong technical pastry skills with an eye for detail and consistency
Confident leader with experience training and supervising teams
Organised, calm under pressure, and highly standards-driven
Flexible with working schedules to meet business needs
