As Beverage Manager, you will curate a unique and thoughtful drinks offering including a well-balanced wine list, a diverse sake selection, and a cocktail menu inspired by Japanese ingredients and flavours.Youll work closely with senior leadership to shape the guest journey from start to finish, ensuring service is consistent, personal, and always memorable. About You: Proven experience in a leadership role within premium restaurants, with exposure to both floor operations and beverage programs. Deep knowledge and passion for wine ideally including natural, low-intervention, and food-friendly wines. Familiarity with sake, Japanese spirits, and a creative approach to cocktail development. A keen eye for detail and a genuine love of hospitality and guest engagement. Hands-on, visible leadership style you lead by example and thrive on the floor. Strong commercial understanding of beverage cost control, GP, and driving sales. Organised, proactive, and comfortable in a fast-paced, independent environment.
