Twelve Triangles is a well-established Edinburgh-based bakery, now entering its 11th year. We are known for our range of sourdough breads and pastries, made from locally and independently sourced ingredients. Our ethos is simple things made well, making everything we can from scratch and knowing where all our ingredients come from. We are looking for an experienced and highly organised Bakery Manager to lead the day-to-day running of our bakery operation. You will manage and support a close-knit team of 17 bakers working across day and night shifts, ensuring production runs smoothly, standards are consistently met, and the team is well supported. All production goes into cold storage to slow fermentation before baking, and we work primarily with UK flours and UK cultured butter. Twelve Triangles is a female-founded independent business, and this role works closely alongside the owners, Senior Management Team, and our Operations Manager. Role Overview As Bakery Manager, you will be responsible for the smooth, efficient and consistent running of the bakery, overseeing production, people, systems and standards rather than leading creative development. This is a hands-on management role, working closely with the baking team during shifts, supporting team leaders, and ensuring clear communication between day and night operations. You will be supported by an Operations Manager who oversees the wider business and communication between the bakery production site, prep kitchen and shops, allowing you to focus on delivery, people management, training, quality control and continuous improvement. This role suits someone with a strong baking background who enjoys leadership, structure and operational excellence, and who takes pride in running a calm, well-organised bakery. A solid understanding of sourdough production, fermentation and bakery workflows is essential, alongside a pragmatic, supportive management style. Key Responsibilities Bakery Operations Oversee daily production of breads, pastries and bakery components (custards, jams, fillings), ensuring output meets agreed volumes, specifications and timelines. Ensure systems are followed consistently across shifts, with clear handovers between day and night teams. Identify inefficiencies, bottlenecks or waste and work with senior management to improve workflows and shift structures. Troubleshoot production issues (e.g. fermentation, weighing errors, temperature control) and ensure learning is shared across the team. People Management Lead, support and develop the bakery team, creating a positive, respectful and well-organised working environment. Train, coach and up-skill bakers to ensure consistency, confidence and adherence to recipes and processes. Support team leaders and act as a clear point of escalation for operational or people issues. Manage rotas, illness cover and holiday calendar Foster strong communication, accountability and team morale. Standards & Quality Control Maintain high standards of product quality, consistency, cleanliness and organisation at all times. Ensure recipes, specifications and processes are followed accurately rather than adapted independently. Monitor quality control checks and address issues promptly. Health, Safety & Compliance Ensure full compliance with food safety, hygiene and workplace safety standards. Maintain Environmental Health standards, documentation and best practice across the bakery. Planning & Coordination Work closely with the Operations Manager and senior team on production planning, peak periods and seasonal demand. Support effective scheduling and staffing decisions to ensure smooth coverage and sustainable workloads. Stock & Suppliers Oversee ingredient usage and stock control in collaboration with the Operations Manager. Ensure correct handling and storage of high-quality raw ingredients. Key Requirements Significant experience in an artisan or high-quality bakery environment, with a strong understanding of sourdough production. Proven experience in a management or senior supervisory role, leading teams in a production setting. Confident people manager with clear communication skills and a calm, practical approach. Strong organisational skills and attention to detail. Ability to balance hands-on bakery work with oversight, planning and people management. Comfortable working across early mornings, nights, weekends and peak periods as required. Strong knowledge of food safety, compliance and Environmental Health standards.
