A bit about what you will be doing:

The Operations Chef plays a key role in supporting the operational performance of multiple restaurants across the group. This role focuses on driving food quality, kitchen standards, team capability and financial performance across assigned sites. Weekend and evening work would be essential for this position. Working closely with Head Chefs, Sous Chefs and the Back of House Operations Director, the Operations Chef ensures kitchens consistently deliver:


  • Exceptional food quality
  • Consistent brand standards
  • Strong cost control
  • Safe and compliant kitchens
  • High performing and engaged kitchen teams


This is a hands-on operational role, requiring regular presence in restaurants during service to coach teams, observe standards and support operational delivery.


Key Requirements:

Food Quality & Brand Standards

  • Ensure food quality, consistency and presentation meet brand standards across all allocated restaurants


Financial & Cost Control

  • Monitor kitchen financial performance across allocated sites. Plus support Senior Brand Chefs and Head Chefs in managing Cost of Sales, labour budgets and kitchen profitability


Kitchen Performance & Operational Excellence

  • Support Senior Brand Chefs and Head Chefs in delivering efficient kitchen operations, strong service execution and food costs


Inventory & Waste Management

  • Monitor stock levels and support kitchens with effective inventory management. Conducting food waste and stock audits to identify improvement opportunities


Team Development & Capability

  • Coach and mentor Senior Brand Chefs and Head Chefs to strengthen kitchen leadership capability


Talent & Succession

  • Identify high-potential individuals within kitchen teams
  • Support succession planning for Head/Senior Chef positions and provide insight into team capability and development needs across the group


People, Wellbeing & Engagement

  • Support the creation of positive kitchen cultures across all allocated sites. Conduct regular check-ins with team members to understand morale, engagement and wellbeing.


Operational Engagement

  • Visit London-based restaurants at least every two weeks and regional sites monthly and attend Head Chef and Sous Chef meetings to contribute operational insight
