Working closely with the Food & Beverage leadership team, you will take ownership of the bars day-to-day excellence, playing a key role in shaping a distinctive cocktail offering while leading from the front during service. This is a hands-on role for a senior bartender who thrives behind the bar, enjoys mentoring others, and is excited to help bring a new hotel and bar concept to life from opening. Key Responsibilities Lead bar operations on shift, ensuring exceptional service and consistency at all times. Create, develop, and deliver a standout cocktail menu that reflects the hotels concept, seasonality, and guest expectations. Act as a role model behind the bar, leading by example and demonstrating best practice in service and drink execution. Train, mentor, and support the bar team in cocktail knowledge, service standards, and product presentation. Ensure all brand standards, SOPs, and licensing, food safety, and health & safety requirements are met. Handle guest feedback professionally, supporting service recovery and continuous improvement. Support stock control, ordering, stock takes, and GP management to achieve cost targets. Work collaboratively with the wider F&B team to support promotions, events, and revenue-driving initiatives. Key Skills Strong technical bartending and cocktail-making skills with a creative mindset. Confident communicator with natural leadership presence behind the bar. Excellent guest service skills with attention to detail and consistency. Good commercial awareness with understanding of beverage costs and profitability. Organised, adaptable, and calm under pressure in a fast-paced environment. Ability to train and motivate others through a hands-on, supportive approach. Familiarity with POS systems and bar stock processes. About You Proven experience as a Head Bartender, Senior Bartender, or Bar Supervisor in a high-end or lifestyle hospitality environment. Passionate about cocktails, trends, and delivering memorable guest experiences. A visible, hands-on leader who enjoys being on the floor and behind the bar. Creative, driven, and proud to take ownership of a bars identity and standards. Flexible, positive, and collaborative, thriving in a dynamic hotel environment.
