You will work closely with the kitchen and front-of-house teams to deliver an exceptional dining experience. Key Responsibilities: ? Oversee the sushi programme , maintaining consistency, quality, and innovation in every dish ? Train, mentor, and develop the sushi team , fostering a culture of excellence and learning ? Manage sourcing and selection of ingredients , with a focus on top-tier seafood and seasonality ? Ensure HACCP and food safety standards are met at all times ? Work collaboratively with the Executive Chef to evolve and refine the sushi menu ? Engage with guests when appropriate , offering insights into the sushi experience and traditions ? Maintain high standards of presentation, precision, and execution in all sushi dishes Who We're Looking For: ? A highly skilled sushi chef with experience in high-end sushi restaurants ? Deep knowledge of Edomae-style sushi , fish preparation, and rice techniques ? A strong leader who can train and inspire a team ? Passion for Japanese cuisine, culture, and tradition ? Attention to detail and a relentless pursuit of perfection ? Ability to work in a fast-paced environment while maintaining quality ?
