Role Summary
An exciting opportunity has arisen for an experienced Head Chef to join The White House Hotel team on a permanent basis.
We are seeking a reliable, talented and passionate Head Chef to lead our kitchen team at The White House Hotel on Herm. The ideal candidate will possess a strong background in food preparation and production, with a keen understanding of food safety standards.
As the Head Chef, you will play a pivotal role in creating exceptional dining experiences while managing kitchen operations and leading a team.
This position requires stability, creativity, and a commitment to excellence in hospitality.
This role is based primarily in The White House Hotel covering the Conservatory Restaurant (40 covers), The Ship Inn (100 covers including gardens and courtyard), private and corporate events in the Marquee (150 covers) and hotel beaches, plus seasonal staff meals.
About You
You have an understanding and experience of a la carte menu development, production and dish presentation to Rosette level demonstrating attention to detail.
You are creative with ingredients, adapting to any limitations without impacting on guest satisfaction.
You are aware of food concepts, current market trends and allergens.
You have a flexible approach and thought to menus to maximise guest happiness and GP% across a la carte, brasserie and private event menus.
You are confident in controlling stock and food production ensuring minimal waste or spoilage of produce, operating within the agreed budget.
You are pro-active in developing the kitchen team skill base.
You understand the importance of collaborating with colleagues across other business units for the benefit of the Island as a business and community.
You have a meticulous approach to Food Safety & Hygiene in practice and record keeping with knowledge and implementation of HACCP principles.
Island Life
Herms outdoor lifestyle is one of its greatest attractions. Residents enjoy stunning beaches, scenic walks, swimming after work in summer, fishing, kayaking, and a variety of other outdoor activities.
Guernsey is just a 20-minute ferry ride away with 6 8 sailings per day during the summer and two daily sailings most days in winter.
Visiting family can stay in self-catering units at preferential rates outside of High Season and School Holidays.
Due to the unique nature and remote location of Herm, a number of island residents volunteer to carry out some emergency services roles. As such there will also be the opportunities to train as a Community First Responder, Retained Firefighter or Special Constable, with full training provided by the relevant Guernsey authorities.
Family & Schooling
For applicants with young families, Herm offers an exceptional primary education through the island school (Vauvert School, States of Guernsey Education Authority), currently with two pupils and two teachers. The island provides a safe, outdoor environment ideal for children to thrive. One day per week children at Herm school are taken to Vauvert School in Guernsey for classes, giving them further opportunities to make friends and experience education in a different setting in preparation for senior school from age 11 onwards.
Having children is not essential for applications to be considered, but embracing community life is. Couples and families who enjoy contributing to and participating in a small, friendly community will settle in well.
Housing
We provide unfurnished but centrally heated accommodation, with residents responsible only for utilities (heating, electricity, gas) and broadband at a nominal charge. Utility costs are considerably lower than in the UK.
