Okko is a hugely popular Japanese Izakaya based on the iconic Broadway Market in East London with a second site in Victoria Park. This is the flagship site, it has a massive local following extending over East London. It's very well known.
The restaurant spans double frontage right in the centre of the market, with one side dominated by a long 7 seat Sushi Bar easily accommodating up to 3 sushi chefs. The Hot Kitchen downstairs constantly delivers all the Japanese hot classics as well as delicious fusion dishes. Its a very busy restaurant all year round, but particularly in the warmer months.
We are looking for an inspiring and technically strong Head Chef who can confidently lead both the Sushi Bar operations as well as Hot Kitchen service. This is a hands-on leadership-driven role in a very busy environment we are looking for someone who thrives in high-energy service, and must have the versatility to work either section as necessary.

The Role:
You will be responsible for all the usual:
Leading, motivating and developing an existing talented brigade.

Maintaining the already exceptional food standards set at Okko as well as creating and implementing new recipes/dishes.

Stocktake and cost control- watching cost, competing for better price with suppliers, but also controlling kitchen spending and minimising waste.

Making sure overall GP is inline with management expectations.

Working closely with senior management on kitchen strategy.

Ensuring a positive, respectful and professional kitchen culture.

Experience:
Senior Sous or Head chef experience in bigger restaurants is preferable but also the busy medium size (70+ covers) restaurant experience in the same position is adequate.

The ability to cope with the level of intensity that inevitably comes with the role is essential.
