Scope of Role
The Head Chef is responsible for leading the kitchen department to deliver a five-star dining experience that meets the diverse nutritional and clinical needs of our members. You will oversee menu design, food safety, and team management, ensuring that "outstanding dining" remains a cornerstone of the Loveday member experience.
Main Duties and Responsibilities
Culinary Excellence: Design and deliver seasonal, high-quality menus that reflect luxury hospitality standards.
Clinical Nutrition: Collaborate with clinical teams to ensure menus cater to specific dietary requirements, including modified textures (IDDSI) and fortifying diets.
Compliance & Safety: Maintain rigorous Food Safety and Health & Safety standards in accordance with UK legislation and CQC regulations.
Team Leadership: Lead, mentor, and train the kitchen team to maintain "uncompromising excellence" in service delivery.
Menu and food consistency, maintain food presentation and quality Standards set out by the Group Executive chef, feedback any complaints or concerns raised by members and work with executive chef to develop future menus and raise the standards across the residence.
Nutritional Management: Work closely with the Deputy General Manager and Manager to ensure all members' nutritional and hydration needs are met as per their Personal Care Plans.
Food Safety (HACCP): Implement and oversee a robust Food Safety Management System, ensuring all records for temperature control and allergens are accurate.
Financial Control: Manage the catering budget, including food procurement, stock control, and waste management, without compromising quality.
Staff Training: Oversee the induction and ongoing training of kitchen staff, ensuring they meet Loveday's high standards of hospitality.
Member Engagement: Regularly interact with members and their families to gather feedback on the dining service and adjust menus accordingly.
Infection Control: Maintain the highest standards of cleanliness in the kitchen area, supporting broader infection control measures.
Meet with members and Heads of Departments to discuss and agree catering functions across the home, and to address special needs or dietary requirements of members. This must include knowledge of cultural and religious preferences.
Comply with audit and member feedback systems to monitor the quality of menus and catering, providing the Group Executive Chef with the required management and departmental reports.
Requirements and Person Specification
Qualifications: Professional culinary qualifications (e.g., NVQ Level 3 in Professional Cookery) and a Level 3 or 4 Award in Food Safety are essential.
Experience: Proven experience as a Head Chef or Sous Chef in a luxury hotel, fine-dining restaurant, or high-end senior living environment.
Regulatory Knowledge: Deep understanding of the CQC Fundamental Standards related to nutrition and hydration (Regulation 14).
Compliance: An Enhanced Disclosure and Barring Service (DBS) check is mandatory for this role.
Skills: Strong leadership, budget management, and a passion for "person-centred" service delivery.
