Head Chef – Mayfair – Modern Mediterranean Restaurant


An established Modern Mediterranean restaurant in Mayfair is seeking a long-term Head Chef to lead a full kitchen rebuild.


The concept centres around Modern Mediterranean and Southern European cooking. Influences draw from the South of France, Italy and Greece, shifting towards warmer North African notes in colder months. The current offer works commercially. There is room to refine, elevate or evolve the direction with the right individual.


The restaurant operates approximately 60 covers in the main dining room, expanding to around 90 with private dining, terrace and bar. Weekdays run lunch and dinner. Weekends operate brunch and dinner. The structure is flexible and open to intelligent development.


The owner is open to a Head Chef bringing trusted team members. Stability and loyalty are essential. This is not a short-term project or stepping stone.


Key responsibilities include:

• Full menu development and seasonal direction

• Cost control and GP management

• Recruitment, training and retention of the brigade

• Kitchen leadership and daily operational control

• Supplier management, ordering and stock systems

• Health and safety compliance


The ideal profile:

• Minimum two years’ experience as Head Chef

• Strong modern European or Mediterranean background

• Confident running a 60 to 90 cover premium casual operation

• Commercially sharp and operationally disciplined

• Calm, steady leadership style

• Proven track record of building and retaining teams


There is flexibility in ambition. The current positioning works. If the right chef wishes to refine and strengthen the existing offer, that is welcomed. If the right chef has the calibre to push towards an accessible Michelin level, that is open for discussion, but only in a casual restaurant setting. The priority is securing the right long-term leader.


Permanent role. Immediate start available. Competitive salary, dependent on experience.

This is a genuine rebuild opportunity for a Head Chef who wants to build something properly over time.
