Central Birmingham We are launching a high-end, intimate omakase dining concept in the heart of Birminghamdesigned to become one of the most exclusive and talked-about culinary experiences in the city. This unique venue will host approximately 12 guests per sitting , across multiple sittings per service, delivering a refined, immersive, chef-led experience at the counter. We are seeking an exceptional Head Omakase Chef (Taisho / Itamae) to join us from the very beginning and play a foundational role in shaping the concept, menu, and guest journey . The Role As Head Chef, you will lead and create a truly bespoke omakase experience, curating seasonal tasting menus that reflect precision, creativity, and authenticity. This is more than a kitchen roleyou will be the face of the experience, engaging directly with guests, guiding them through each course, and delivering a world-class standard of hospitality. Key Responsibilities Design and deliver a seasonal omakase tasting menu Lead a 12-seat counter dining experience with multiple sittings Source and work with premium, seasonal ingredients Execute advanced sushi techniques, including aging, curing, and knife mastery Create a memorable, interactive guest experience Set standards for quality, presentation, and service Contribute to the overall concept development from launch onward Build and lead a small, high-performing team About You Proven experience in fine dining / Michelin-level environments Strong background in Japanese cuisine and omakase service Highly skilled in sushi preparation and traditional techniques Confident, charismatic, and comfortable in a guest-facing role Passionate about seasonality, precision, and storytelling through food Entrepreneurial mindset with a desire to build something from the ground up Experience in opening or launching new concepts is highly desirable What We Offer Highly competitive salary Performance-based bonus Potential equity / shares in the business Opportunity to be part of a founding team Full creative input and ownership of the dining experience The chance to create one of Birminghams most exclusive culinary destinations This is a rare opportunity within a niche, high-end market , ideal for a chef who wants to step into a defining role and build a reputation alongside a standout concept.
