Full Job Description
We are seeking an experienced Head Baker to lead our artisan production unit in London. As Head Baker, you will be responsible for overseeing all bread and pastry production, maintaining exceptional quality standards, and managing overnight bakery operations. You will lead by example, ensure consistency across all products, and play a key role in production planning, team supervision, and continuous improvement.
Hours: 10:00 PM - 7:00 AM
Start Date: ASAP

The Person

The ideal Head Baker will have:
Extensive experience in artisan bread and pastry production Proven ability to lead and supervise a bakery team during production shifts Strong expertise in fermentation, dough handling, proofing, baking, and pastry preparation Experience planning production schedules and managing workflow to meet targets and KPIs A high level of attention to detail with a strong focus on food safety, hygiene, and compliance Excellent organisational and problem-solving skills Reliability, punctuality, and the ability to manage overnight operations independently Strong communication skills with a positive, team-focused leadership approach
