Report to: Head Chef and Sous Chef
Role Overview Were seeking an experienced Pastry Chef de Partie to join the pastry team of a high end dining level Mediterranean restaurant. Youll produce refined plated desserts and pastry selections rooted in Mediterranean flavors and seasonal ingredients, maintain a flawless station, and support the pastry Head chef in delivering an elevated guest experience.
Key Responsibilities - Execute daily pastry and plated dessert production to exacting quality and presentation standards. - Follow recipes precisely and adapt pastry elements for specials while preserving consistency. - Temper, temper-control and handle chocolate; prepare ganaches, pralines and confections. - Maintain mise en place, inventory accuracy, stock rotation (FIFO) and minimal waste. - Mentor and train junior pastry cooks and interns; oversee delegated prep tasks. - Ensure pastry station cleanliness, hygiene and compliance with food safety and allergy protocols. - Collaborate with Executive and Head Chefs on menu development, pastry concepts and plating ideas.
Qualifications & Experience - 24 years professional pastry experience in upscale or fine dining kitchens; Mediterranean pastry experience preferred. - Vocational diploma or certification in pastry/baking or equivalent professional training preferred. - Strong technical foundation: laminated doughs, choux, custards, meringues, tempering chocolate, sugar work and mirror/glaze application. - Demonstrated fine dining plating experience and attention to detail. - Ability to work in a fastpaced, highstandards environment and execute under service pressure. - Knowledge of food safety (HACCP) and allergen management. - Excellent communication, teamwork and timemanagement skills.
