Responsibilities Running all aspects of kitchen operation in the Head Chef's absence. Training and motivating your staff. Keeping up to date with food safety legislation, liaising with the authorities and taking overall legal responsibility for the premises. Enforcing health and safety rules. Supervising all food preparation and presentation to ensure quality and restaurant standards. Managing stock and product ordering, maintaining detailed records and minimising waste. Requirements: Proven experience as Sous Chef Exceptional proven ability of kitchen management Ability in dividing responsibilities and monitoring progress Outstanding communication and leadership skills Good understanding of useful computer programs (restaurant management software, POS) Exceptional understanding of hygiene and safety requirements and systems. Credentials in health and safety training.
