The Role We are looking for an enthusiastic, ambitious and passionate Sous Chef to join the team. Ideally with experience within fine dining or quality gastropubs, with a minimum 1 year at Sous / Junior Sous level. Experience with oysters and seafood is beneficial but not a requirement. You should be passionate about produce, the industry and delivering the best you can on a plate. Able to work under pressure and be a team player within a tight nit group, showing leadership to the junior chefs. We also want people who want to grow and develop in their role. You must also have a knowledge and understanding of British cuisine and classical cookery. The Pub William IV is a pub steeped in nearly 200 years of history, beautifully renovated and reopened in 2023. Since its reopening, it has become a beloved local establishment and a sought-after destination for exceptional food and drink. Our menu is inspired by ingredient-led, flavor-driven cooking, utilising the finest suppliers in the industry. Highlights include: Fresh Fish: Sourced from day boats at Brixham market supplied by Flying Fish Seafoods, prepared on-site from gutting to filleting. Heritage Meats: Supplied by Swaledale Butchers in the Yorkshire Dales, renowned for their rare breed nose to tail butchery, supplying many of London's top restaurants. We do a lot of butchery on site too with opportunities to develop new skills in this. Seasonal Excellence: A focus on high-quality, seasonal ingredients at accessible prices has earned us a strong reputation. In November, we launched The Dining Room , an intimate more formal dining experience on our first floor. The menu showcases fine dining techniques in an approachable setting, featuring seasonal, elevated dishes. Since it's launch it has garnered notable press and acclaim, leading to us being listed in a number of Best Gastro Pubs in London lists, as well as being named #4 in Time Outs Best Sunday Roasts in London.
