The role is based at the Convention Centre Dublin. The CCD is the first state-owned, public access building. Designed by an award-winning Irish-born architect, the CCD quickly became a landmark building on Dublin's skyline when it opened in 2010. Its stunning glass fronted atrium gives visitors panoramic views of the River Liffey, Dublin city centre and the Wicklow mountains.

We are seeking an experienced and passionate Sous Chef to join our dynamic culinary team. This is an exciting opportunity for someone with a background in fine dining or high-end restaurants, who thrives in a fast-paced, upscale kitchen environment. You will be responsible for managing daily kitchen operations, supporting in menu development, leading and developing a team, and ensuring exceptional standards in food quality, safety, and service.

Sous Chef- The role
Prepare and deliver outstanding, seasonal dishes using the finest and freshest ingredients. Work as part of a highly skilled team to produce high-end, restaurant-quality food at scale. Lead by example, coaching and developing kitchen team members to maintain a high-performing brigade. Collaborate on innovative menu development that aligns with current trends, sustainability goals, and client expectations. Ensure strict adherence to Health & Safety and Food Hygiene (HACCP, allergen controls, etc.) regulations. Oversee stock control, ordering, portion management, and GP targets with strong commercial awareness. Maintain exceptional standards of cleanliness, organisation, and timekeeping. Support and execute large-scale events, including plated fine dining experiences for VIP guests.
What we're looking for
Previous experience as a Sous Chef or Head Chef in a busy, upscale kitchen or fine dining environment. Strong commercial acumen, with experience in GP management, supplier relations, and portion control. Demonstrated leadership ability, with a positive attitude and willingness to grow and support others. Passionate about food and hospitality, with a commitment to seasonality, sustainability, and excellence. Confident and calm under pressure, with the ability to deliver consistent quality at high volume. Holds relevant culinary qualifications and up-to-date food safety certifications (HACCP, allergen training etc). A team player who values integrity, reliability, and innovation.
