Join Roketsu, an authentic Japanese destination in the heart of Marylebone. We are seeking a disciplined Demi Chef de Partie to join our sushi team under the direct mentorship of Master Chef Tanahashi.
Chef Tanahashi is a veteran of the London Japanese dining scene (formerly of Zuma and Roka) who uniquely blends French culinary precision with traditional Washoku. At Roketsu, we offer a refined Kappo-style experience, where guests enjoy the intimate performance of the chef preparing seasonal ingredients directly at the open counter.

What You Will Learn & Do
Sushi Excellence: Prepare and serve high-quality sushi that meets our authentic yet modern standards.

Mastery of Fish: Perform expert fish handling and preparation to exacting standards under a Japanese Master Chef.

Guest Engagement: Deliver a warm, professional, and refined "Omotenashi" experience at our 10-seat sushi counter, bridging the gap between the kitchen and the diner.

About You
Minimum 2 years of experience as a Sushi Chef.

A strong desire to master authentic Japanese sushi techniques and fish handling.

Professional, calm, and able to work effectively within a high-performance team.

Must have the Right to Work in the UK
