Chargal is seeking a disciplined and creative Head Chef to lead our culinary operations in Mayfair. We specialise in sophisticated, charcoal-based cuisine, prioritising ingredient integrity and technical precision in a high-pressure, refined environment.
The Role As Head Chef, you will hold full accountability for the kitchens output, culture, and commercial performance. We require a leader who can balance the artistry of open-fire cooking with the rigorous operational standards required in one of Londons most competitive dining districts.
Core Responsibilities:
Kitchen Leadership: Direct all back-of-house operations, ensuring consistency, speed, and uncompromising quality during service.

Menu Development: Evolve a seasonal menu that centers on live-fire techniques and premium sourcing.

Operational Management: Take full ownership of P&L, including food costings, labor management, and supplier relationships.

Compliance: Maintain the highest standards of food safety, health and safety, and HACCP documentation.

The Candidate Proven experience as a Head Chef or Senior Sous Chef within a high-profile, premium London restaurant.

Technical Expertise: Advanced proficiency in charcoal and wood-fired cooking. While not a strict requirement, a deep understanding of Mediterranean and Turkish culinary traditions and their application to open-fire cooking is highly advantageous.

Leadership: A calm, authoritative style with a track record of mentoring and developing junior talent.

Commercial Acumen: Meticulous attention to detail regarding margins, waste, and labor costs.
